Fruity Scotch Hotcakes

Basic recipe (I usually halve it as it does make a lot). This is a fabulous low GI recipe that I like to make to keep my little man going on busy days.

Ingredients:
1 egg
300ml milk
1 tablespoon sugar*
1 cup Oats
¾ cup flour
½ tspn baking soda
½ tspn baking powder

Whisk egg in bowl, add milk and stir. Add sugar, oats, flour, baking soda and baking powder.
Heat pan to medium and lightly grease with canola oil. Place spoonfuls in hot pan, cook until light brown then flip and cook the other side. Serve drizzled with honey and fruit.

Variation
Add fruit of your choice
strawberries are our favourite (if using frozen, allow to thaw first)
Grate an apple and add a dash of cinnamon
Bananas are a really yummy addition
Put in blender with egg, milk and oats and blend until fruit is in small chunks. I like to put the oats in to make them smaller for a smoother consistency. Add to dry ingredients and cook as above.

*I don’t bother putting sugar in when adding fruit.
